Part of the Marriott Bonvoy family, Casa Brera enters a fresh era of Milanese dining with its new Executive Chef, Antonio Gentile.

Casa Brera Appoints Antonio Gentile as Executive Chef

Etereo, the hotel’s all-day dining restaurant, sits atop the Luxury Collection Hotel in Milan, offering an impressive 360-degree view of the city skyline. Opening its doors in September 2024, Casa Brera became part of Marriott’s Luxury Collection in February 2025. Nestled in the heart of the city, the hotel sits in the Piazzetta Bossi with the beautiful Teatro alla Scala and the Brera district as its neighbours. 

Internationally acclaimed architect and designer Patricia Urquiola led the hotel’s design as it emerged from a considered renovation of the historic rationalist building restored in the late 1950s by architect Pietro Lingeri. Urquiola blended a modern cosmopolitan aesthetic with traditional Milanese heritage to create impressive interiors fitting for a Luxury Collection Hotel. 

 

Milanese culture is at the heart of the project, with the soul of Chef Gentile’s home region of Campania flowing throughout. Etereo strives to take guests on a journey of discovery through Milan, offering refined and creative cuisine that aligns with the city’s charm. With seasonality carefully considered, ingredients are the driving force behind the new dishes, holding high respect for traditional Italian cuisine whilst simultaneously looking to the future to curate an elegant offering. 

Ready for multiple occasions and dining styles, Etereo welcomes diners throughout the day with the chef’s signature dishes including beef tartare with mimosa egg and seasonal vegetables, stuffed squid with buffalo ricotta and candied lemon, and risotto alla Milanese with ossobuco croquette and gremolada.

 

Chef Gentile sees this as more than just dishes on a menu: it is a cultural, sensory journey that becomes a narrative in itself, with each dish serving as a fragment of a story shaped by his personal vision.
